These wines come from a land full of history in the Southern French Languedoc-Roussillon appellation, over four departments along the stunning Mediterranean coast. Here, the northern mountains of the Pyrénées and the Cévennes embrace the vineyards of the Pays D’Oc like an amphitheatre.
The region benefits from the Mediterranean climate and with its coastline bordering the region in the South, it provides hot and dry summers for a perfect maturity. On the other side, the Black Mountain brings enough humidity and cool temperatures for the vineyards to produce grapes packed with fruity aromas. The terroir effect is very noticeable in this region due to the great selection of winegrowing areas that create an expression of the grape varieties that is unique.
This specific Chardonnay is sourced from lowland vineyards from the Pays d’Oc, planted on calcareous marls. These well-drained soils, located close to the Canal du Midi, are protecting the vines from drought as the Chardonnay needs enough watering to produce balanced and healthy grapes.
The grapes are harvested early in the season, in the fresh morning. The pressing is very gentle, in a pneumatic press preserving the crop quality. 30% of the wine ferments under the influence of French oak, with temperature control. To preserve the freshness of the wine, the malolactic fermentation is stopped. The wine is aged during 5 months on its fine lees with regular stirring before bottling.
