Crémant de Bourgogne is the only AOC for sparkling wine in Burgundy and has been enjoying increased recognition and popularity in recent years thanks in large part to its delicate bubbles, fresh acidity and subtle flavours making it an excellent alternative to Champagne.
Henri Champliau is a family owned winery based in Mercurey, in the heart of the Côte de Chalonnaise region of Burgundy. They specialise in high-quality Crémant de Bourgogne with an uncompromising focus for producing craft wines that are both elegant and complex. Their 75 acres of vineyards are all harvested by hand.
After gentle pressing the base wines (Chardonnay, Ugni Blanc and Colombard) are all vinified separately and Henri Champliau believe that the secret to producing exceptional sparkling wines is to make the best possible blend by using a strict selection process. The ‘Charmat’ method maximises the surface contact between the wine and the lees delivering richer, rounder and fruity aromas. The second most important ingredient is time! The process for creating bubbles takes a minimum of 3 months for the cuvée to be perfectly balanced with delicate, well incorporated and even bubbles prior to bottling.
The wine is named after a horse that was bred by Henri Champliau Snr and was one of the most successful of its generation winning the prestigious Paris-Longchamp in 1968.
Tasting Notes:
Copious thin bubbles, pear and apple aromas. Soft and generous on the palate finishing with a beautiful freshness and citrus notes.
This wine tastes young, fresh and easy to drink. It can be enjoyed on any occasion, by its own as an aperitif and also works perfectly in cocktails. Ideal food pairings include lobster tails, soft lactic cheese or raspberry tart.
